Here is my recipe for a tasty, satisfying cabbage soup. It's great for cleansing and even when you are not cleansing.
Note: if you tend to get gas when you eat cabbage, you might want to use different vegetables. You can remove the cabbage and brussels sprouts and substitute beets, yams, red potatoes and/or squash.
Hearty Cleansing Cabbage Soup Yield: 4 quarts
Ingredients 3 qts spring water or chicken broth 4-6 boullion cubes (if using water instead of chicken broth) 4-6 garlic cloves, minced or pressed 1 large yellow or sweet onion, chopped 4 stalks celery, chopped 1/2 tsp Thyme
1 medium diakon radish, sliced 2 cups brussels sprouts, halved or quartered 3 carrots, chopped 1 small or ½ large cabbage, chopped Sea salt and pepper to taste
Instructions In soup pot, saute on medium low heat: onions, garlic, celery and thyme with olive oil, grapeseed oil or coconut oil and a little water.
When onions are transparent and celery is tender, add water, turn heat on high. Add remaining veggies and cover the pot.
When water boils, turn heat down to simmer, about 20 minutes or until root veggies and cabbage spines are tender.
This is a great soup even if you are not cleansing. You can embellish it for a hearty autumn meal. I like to mix and match by tossing in different ingredients each time I serve: options might be turkey or chicken pieces, turkey sausage, legumes, feta cheese, etc. Be creative!
